Chocolatey Chocolate Vegan Brownies

Vegan baking can be tricky - there oftentimes tends to be a problem with texture (i.e. brownies that are too dense). Dissident Island interviewed a fantastic expert anarchist baker at the UK Climate Camp's onsite vegan bakery who told us a way around the density problem is to measure out all your ingredients first (remember to sift your flour!), let your oven get really nice and hot, quickly mix everything together, whipping it as you go along to incorporate as much air as possible....and then once the mixture is done, pour it into a greased pan and throw it in the oven so that the air stays in the mix...doing this, as opposed to letting your mix sit for ages before it gets baked, helps that little bit in regards texture.

So...having said that, to make your brownies, first turn your oven on to 175 celcius so that it's at the right temperature once your mix is done. Measure out your ingredients. Grease a 9x13 inch baking pan and set aside. Sift the baking powder, flour and cocoa together into one bowl, mix your wet ingredients (coffee, oil, vanilla) with the sugar and salt in another bowl. Add the wet ingredients to the dry ingredients. Mix...mix...mix...quick! Keep mixing it! No don't stop! Keep mixing! And then mix it some more! Then pour your brownie batter into the greased pan (before you eat half of it because it'll taste that good) and throw it in the oven, where it'll bake for about 30 minutes and amazing chocolate aromas will waft out in all directions. You'll know the brownies are ready with a knife or toothpick test to the center.

There are very few things in life that aren't enhanced and / or improved by the presence of chocolate. So treat yourself!
