Gazpacho

How to mix it up:

So first cut up the stale bread into small pieces. Put it in a large bowl or pot and soak with water until mushy. Chop up all your vegetables finely and put these in another bowl. Add oil, vinegar and salt. Using a hand held mixer or a potatoe masher or your weapon of choice, mash these ingredients until well mixed. Add this vegetable/oil/vinegar medley to the soaked bread. Mash everything together, adding cold water little by little to get a nice consistency that’s not too dense but not too watery – use your own judgement on this. Then let the soup sit in the fridge for a while for the flavors to meld – time will improve the taste. Serve cold! You can garnish with cucumber or parsley or a bit of freshly ground black pepper.
