Peppery, Nutty, Quick 'n' Easy Pasta

 

Eat it hot or cold. Serves loads of people so great for parties. Super easy to make and amazingly tasty!

What to do with all that stuff:

Get a big pot of water going for your pasta. In the meantime finely chop up the onions and garlic. Start cooking those in heated oil in a heavy sauce pan. Pour on some salt. After 5-10 minutes, when the onions are nice a soft, add the chopped peppers. Add about 3 tablespoons of balsamic vinegar, a bit more salt, a sprinkle of pepper flakes and a nice dose of paprika. Cook until tender. While this is cooking, you can quarter your cherry tomatoes and also put your nuts and fresh herbs into a food processor to get them all crushed up. Once the pasta is done cooking, strain well and add to the sauce. Toss in the chopped nuts, herbs and tomatoes………et voila! Food for 8 to 10 people!

Tips:

To speed things up, put your onions in a food processor before cooking. You can do the same with the sweet peppers.

In the event of not having a food processor, get some (possibly unwilling and unsuspecting) person with idyle hands and task them on chopping stuff up. Sous-chefs are grrrrrrreat!
